This Zero Point Salmon en Papillote is a perfect dinner if you’re looking to eat healthier! The Zero Points refers to Weight Watchers points (I’m on the Green plan). But if you’re not on WW – no worries – it’s healthy – I promise! I’ve cut out the fat that you might normally use like butter and replaced it with lemon herb seasoning and a yogurt sauce. It’s so tasty!

Besides being super GOOD FOR YOU – this dish is so easy to make! En papillote sounds fancy – but it just means “in paper” – so you pop all the ingredients in parchment paper – and bake it for 30 minutes. It only takes 5 minutes to put together! That’s the kind of meal I need on a weeknight!

What are Zero Point Foods?

Weight Watchers has a list of zero point foods – they are low in fat and calories. Depending on which plan you’re on the list is bigger or smaller. On the Purple plan, there are a TON of zero point foods – but on the Green plan, there are fewer. What’s the difference? Things like salmon and beans are zero on purple but not green. When you’re on Purple you have fewer points for the day – compared to Green. (i.e. 19 vs 35). I’m on Green because I need a little more restriction.

What’s in Salmon en Papillote?

Obviously – there’s salmon! Fresh is always best – but most of the time I use frozen and thaw it. I also love broccoli – it’s my favorite vegetable – every week I buy 3-4 broccoli crowns. I just got this microwave steamer and use it ALL THE TIME! Broccoli is one of the few veggies I prefer steamed vs air fryer.

Lastly – I scoured the zero point food list to find something that felt starchy – and the butternut squash was perfect! Plus – you can get a bag of it in the freezer department! WooHoo! That starchiness makes it feel like you’re eating sweet potatoes – but you’ve got the zero point factor going on!

Do you like Parchment Paper or Parchment Bags?

As far as the parchment paper – you can use regular parchment paper – and I did for this because I was out of my favorite parchment bags. With the paper you just sort of bring the sides up and fold them over a few times so it stays together. Then fold the sides under like you’re wrapping a gift. I’m not going to lie – I’ve been known to staple them if I can’t get them to stay! Bhahaha! That’s why I started buying the bags – they are really great quality and not that expensive.

You will LOVE this salmon en papillote – it’s so easy and the Greek yogurt sauce on top is perfect! It adds the creaminess and a much needed sauce. Normally I would have put butter on all of this – but the Greek yogurt was perfect! Definitely no need for butter! Zero points victory!!!!

Zero Point Salmon en Papillote Dinner

This ZERO POINT dinner is great! The salmon, broccoli & butternut squash are all so good for you! Then sprinkle on some seasoning and add a zero point sauce – and you’ll never believe it’s zero points!

prep time: 5 minscook time: 30 minstotal time: 35 mins

ingredients

  • 3/4 pound salmon, separated into two pieces
  • 1 broccoli crown, broken into pieces
  • 1/2 bag frozen diced butternut squash
  • 1/2 lemon, thinly sliced
  • Lemon Herb Seasoning
  • 1 5.3 oz cup of nonfat Greek yogurt
  • juice from other 1/2 lemon
  • 1 tablespoon fresh dill
  • 1/2 tsp coarse sea salt

instructions

  1. Preheat oven to 350
  2. Lay out two large pieces of parchment paper – (or use parchment bags)
  3. On each piece of parchment paper – lay out a piece of salmon, 1/2 broccoli and 1/2 butternut squash
  4. Sprinkle lemon herb seasoning heavily on salmon and lightly on veggies. (I likeOld Bay Lemon Herb Seasoning)
  5. Add 1-2 lemon slices on each packet
  6. Fold parchment paper like wrapping a gift – bring up sides and fold down – then tuck sides under salmon (the bags are easier!)
  7. Place in oven for 25-30 minutes – until salmon is medium rare
  8. While parchment packs are cooking, make sauce by combining yogurt, lemon juice, dill and salt. Stir and refrigerate until salmon is ready.
  9. When salmon is ready, serve and top salmon with yogurt sauce!

    This was gorgeous! I threw some fennel on the pan as well and used sweet potatos instead. It turned out really, really delicious! The lemony butter really complimented the sweet caramelised fennel. Would recommend this to everyone, like all your recipes.
