I said last time I hosted #CookBlogShare that a lot happens in a month, and this month has been no exception! May has been a very busy month. But by far the highlight of the last month was Blog On. Blog On is conference for bloggers – an opportunity for bloggers to meet and socialise, listen to great talks and seminars on all aspects of blogging, and network with PRs and brands.The best bit by far for me was the opportunity to meet up with some of the bloggers I chat to (almost on a daily basis!) in my Productive Blogging Community Facebook group. Blogging is a funny old world where you get to know people so well online, but rarely get to meet fellow bloggers in real life. So, from that perspective, Blog On was a real treat.The talks were also brilliant. I went to talks on subjects as diverse as Gutenberg (the new style of editor for WordPress blogs), Search Engine Optimisation, PR for Bloggers and How to Build a Tribe. I now have a notebook full of notes and a head full of new things to try!I’ve also been busy this month working on my 2 blogs. On Easy Peasy Foodie I’ve shared 2 new recipes, both recreating favourites of mine from the Nando’s chain of restaurants. First, my homemade version of Nando’s spicy rice and then I shared my easy peasy version of Nando’s Peri Peri Chicken Breasts. And both are already proving very popular – clearly, I am not the only fan of a cheeky Nando’s fakeaway!

4 Ravishing Rhubarb Recipes

Choosing the theme for this week’s #CookBlogShare roundup was not a hard job – it was all the lovely recipes made with rhubarb which caught my eye from last week’s linky. And as rhubarb is very much in season, it felt wrong not to share them in this week’s roundup!

Gluten Free Rhubarb Upside Down Cake

First up we have this gorgeous Gluten Free Rhubarb Upside Down Cake from Kate at Gluten Free Alchemist. But this is no ordinary rhubarb upside down cake! Not only is it gluten free but it’s also made with a delicious strawberry and almond sponge incorporating real freeze dried strawberry powder and lots of ground almonds. Kate explains how she loves using ground almonds in gluten free bakes because they add structure, lessening the potential crumbliness and dryness that is all too common in gluten free bakes. (She’s not called the Gluten Free Alchemist for nothing, you know!)

Rhubarb and Pecan Muffins

Continuing on the rhubarb with nuts theme, we have these lovely Rhubarb and Pecan Muffins from Janice at Farmersgirl Kitchen. Janice has rhubarb in her garden that’s been growing there for 50 years – so she really knows what she’s doing with rhubarb and has lots of other great rhubarb recipes on her website too. Her recipe for Rhubarb and Pecan Muffins has lots of really great tips to make these muffins as delicious as can possibly be – like making sure to chop the rhubarb up nice and small to ensure the rhubarb is well distributed through the muffin mixture, but not chopping the nuts up too small or they get lost!

Homemade Rhubarb Cordial

Showing just how versatile rhubarb can be, Jo from Jo’s kitchen larder has turned her rhubarb into a Homemade Rhubarb Cordial! Her cordial simply needs diluting with still or sparkling water to make a delicious, refreshing and very summery drink. Though, I have to say, I especially like her idea of turning her rhubarb cordial into simple summery co*cktail, using Prosecco or Cava instead of water – perfect for garden parties and barbecues this summer!

Rhubarb Cake with Elderflower Drizzle Icing

If you like rhubarb, then you are going to love this last entry! In last week’s #CookBlogShare, Jacqui from Only Crumbs Remain linked up her massive roundup of a whopping great 25+ Fabulous Rhubarb Recipes! I have chosen my favourite from that post to showcase in my roundup this week – her Rhubarb Cake with Elderflower Drizzle Icing, from Only Crumbs Remain’s sister site, Recipes Made Easy. I’ve never tried rhubarb and elderflower together, but I just know it must taste amazing. I love how Jacqui has used crystallised edible flowers on the top to decorate – elegant, but simple. Now that’s my kind of cake decorating!
